Blueberry Dump Cake

Ok so this is a super easy recipe, and Don loved it. He said it was his new favorite dessert.

Take a can of pie filling of your choice and about 3/4 cup of water or any juice you want and dump it into a pan and mix it up (i used 9x13, but i think any pan would do)

Take a package of cake mix (any kind you think would go good with whatever fruit you use) and sprinkle it over the fruit

Slice up a stick of butter into a bunch of little pats and lay them on top of the cake mix

Bake at 350 for about 45-55 minutes and you're donnnneeee

Recipe:
-1 can of pie filling of your choice

-1 box of cake mix of your choice
-1stick of butter cut into pats

Preheat oven to 350. Dump your pie filling and water or juice into your pan and mix together. Sprinkle your cake mix over fruit. Put your pats on the cake. Bake for about 45 minutes.

Egg Roll Rampage

These were actually intended to be Lumpia, the Filipino version of egg rolls. When i was little, my gramma worked with a lady who would make hundreds and freeze them and we would get them, fry them and enjoy their deliciousness. Me and gramma liked ours with spicy mustard. They didnt have Lumpia wrappers at the store so i had to get egg roll wrappers, so they are just egg rolls now. ONWARD...

chop up 1/2 cup of onion

Add 2 cloves of garlic (chop them...i just thought it looked like a cute heart devil)

Shred 1/2 cup of carrots, and chop up 1/2 cup green onions

this is where i tell you to get 1/2 shredded cabbage ready

Brown 1lb of pork in a pan

After its brown take it out and set it in a bowl. Put in your onions and garlic and sautee until mostly soft

Add in the carrots and green onion, dash of soy sauce,and lotttts of pepper

Then add in the cabbage, and stir around until it wilts a bit

Set aside to cool

Get your egg roll wrappers ready like this

Put about 2 T of the meat mixture into the wrapper like thissss

First fold in the bottom like this

Fold in the sides like that

Roll er' up (i forgot to take a picture but i hope you all know how to roll)

Fry in about 1/2 oil, until brown on all sides (takes about 3 minutes)

I brought one over to my neighbour, Guy and he just LOVED them. He said they tasted just like you'd get at a restaurant, but better. They are so easy too.


Recipe
-1lb pork
-1/2c. chopped onion
-2 cloves garlic chopped
-1/2 chopped green onion
-1/2 shredded carrot
1/2 c. shredded cabbage
-dash of soy sauce
-lots of pepper
-egg roll wrappers
-1/2 c. oil for frying

Brown pork in a skillet until no longer pink and transfer to a bowl. Sautee white onions and garlic until soft. Add in the carrots and green onions and sautee for about 2 minutes. Add in cabbage. Transfer to a bowl to let cool

Take your egg roll wrapper with a point facing down. Put about 2 T of meat mixture going horizontally. Fold bottom up, fold sides up, and then roll tightly...youll need to put a bit of water on the top flap to seal closed. Fry in oil until brown (approx 3 minutes)

never ever use distilled water

Chucky Baby

Lately, i've been having kind of a rough time dealing with my grammas death. Its been almost 4 months, and it hurts more now than it did when she first died. I wish i could have been with her the last couple of weeks. I only got to visit her a handful of times in the past 4 years, and that was really hard for me because I was so close to her and basically lived with her a lot of the times. There will be times during the day when I go to call her and then it clicks that she's dead. I just cant imagine her not alive anymore. I just imagine her sitting in her chair watching tv when we're about to eat dinner, or on the weekends when my mom, her and me would go shopping. I obviously knew she wasnt going to be alive forever, but it still kinda felt like she would. Its so weird that i could just call her when i felt like it to tell her about my day, and now shes just not there. When I stood up by her casket at the wake, it didnt even seem like she was really dead. It felt so surreal...like she wasnt really dead, and that her body in the casket was fake or somthing...i dunno. I really wanted her to be alive to see me get married. I suppose she would be watching over me and whatnot, and thats what id like to believe, but its kinda hard to believe when theres no sign or anything. I hope she is though and that shes here with me somehow.



MEGAPOST MEGAPOST MEGAPOSTTT!!!!

Lots of pictures and lots of STUFFFFF!!! Ok first...Anyone ever had the Fuji Apple Chicken Salad from Panera? Well...its DELICIOUS, so yesterday I decided to try and recreate it. It didnt turn out perfect, but it was still pretty darn good. The original salad has citrus herb grilled chicken, greens, gorgonzola, pecans, red onions,tomatoes and of course the delicious apple vinagerette. I left out the pecans and tomatoes just because i didnt have any. Anyhoo here is what i did for the salad

dressing:

-1T White Balsamic Vinager
-1T cider vinegar
-1T sugar
-1t dijon mustard (i didnt have it so i used a tinnnny bit of horseradish just as an extra emulsifier)
-3T apple juice concentrate
-dash of garlic powder
-1/4 c. olive oil

I put everything in my little baby food processor and mixed it all up

Salad:
-grilled chicken, or you could use the pre packaged pre chopped stuff
-handful each of mixed greens and romaine
-thinly sliced red onion
-diced tomatoes
-handful of pecans
-about 1T of gorgonzola or more if you like
-handful of apple chips mmmmm

Then take your greens (mixed field greens and romaine)

put them in the bowl and top with however much of everything else you want, then pour on your dressing and enjoy

Now for the Foccacinis...its like little rounds of bread/almost pizza...this is what i used for mine and Don really loved them,but you could almost put whatever you wanted on them

-1 can of original biscuits
-1T pesto
-1T tomato paste
-1 clove of garlic through the press
-1t zesty italian dressing
-2T gorgonzola
-sprinkle of fresh grated parmesan cheese

Preheat oven to 350
Lightly grease a cookie sheet.Mix the pesto,tomato paste, garlic, and dressing together. Open your biscuits and flatten them out, and spread some of the pesto mixture on each flattened biscuit. Sprinkle some parmesan cheese, and gorgonzola on each one. Bake 15 minutes or until golden, serve WARRRRRRMMM yum.

TEA SAMMICHES!!!
I made these just for fun last nite

-4 slices of bread of your choice with the crusts cut off
-cream cheese
-mayo
-thinly sliced cucumbers (i used about 10 super thin slices)
-chopped dill (i love dilllll)
-salt and pepper to taste

Take your crustless bread and spread cream cheese on 2 slices and mayo on the other 2 slices. sprinkle dill on the cream cheese side,and salt and pepper on the mayo side. put 5 thin slices on 2 pieces of the bread and top with their partner pieces. Cut into fours, pour some tea, stick out your pinky and enjoyyyy

So today I made some chicken satay. The marinade was too thick, so next time ill make it thinner. It tasted decent though. Then later on Dons sister Kayla came over and me, her, and dons mom went to the Albertville Outlets because she needed to go to this motherhood store to get some maternity clothes. I wanted to go to the Cosmetics Outlet, and IT WAS AWESOMEEEEEE!! OMG I cant wait to go back. I got 4 lipglasses, an Adoring Carmine set, and Light Flush MSF...sooo awesome i cant wait to go back. There was some yoo hoo on the highway with a trailer and had no tail lights on his trailer and we could have rammed into him because we could barely see him...dumbass.

It was SOOOOOOOOOOO freaking nice today. It got up to 73 and there was a heat index of 75....ahhhh-mazing. Too bad I didnt really do too much outdoors today. Me and Don took Hüsker out for awhile but now when he's inside he just howls to go outside so we arent gonna let him go outside anymore. Don took me to Panera today for lunch which was super nice since he hates that place. I had to have them warm up his sammich a 2nd time though because the meat was still cold. I love that Fuji apple chicken salad mmmmmm the dressing...soooo good. Then we went to go see Crank 2: High Voltage...it was good. I love the way those movies are shot. About 3/4 of the way through, these 4 people in front of us walked out because i dont think they were expecting so much violent language. They walked out right after a part that kept putting "Fuck you Chellios....Fuck off Chellios..." a bunch of different ways in a bunch of different fonts all over the screen lol. THENNNNN we get outside and Don forgot his hat, and he asks me to go back in and get it, and i have these stupid high wedges on that i cant walk too fast in, so im waddling back to the theatre which is like the farthest one away, and thenn i twist my knee going up the stairs in the theatre and then i get the hat and walk back to the car, and our theatre was the furthest one away from the car, so needles to say, my feet hurt right now. Then we came home and I went for a walk with Savannah and Georgia and we played at the park for awhile, came home and then me and Savannah went to Mongos for dinner. I dont get to eat there very often because Don doesnt enjoy it very well. Tomorrow we are grilling! Welp thats about it for now!

4 years

So today was me and Dons 4 year anniversary woo hoo lol. He got me some pretty red roses.

We went to Pancheros for lunch and i had some of their delicious guac and a steak taco...mmmm. We then went to a furniture store looking for a console table but didnt find anything worth writing about. We came home for awhile and then went to see Observe and Report. It was a dumb movie. It was not put together well, but there were some funny parts. I wanted to go to this new place for dinner because they have grilled corn on the cob but it was PAAAAAAACKED...almost everything was packed, so we went to Famous Daves. It was nice again today-66, but a bit more windy than yesterday so it felt a little bit more chilly. Its supposed to be 65 tomorrow too, so im pretty excited about that.

Apparently dons mom won $84.00 at BINGEE!!! Good shit Jeanette. Put the bingo money in the BAG you BITCH!

Soooo yesterday was Easter. Not much to write about there really. Everyone came over...we ate..they went home. I made a disaster cake that kept falling apart, but tasted really good. I also made mac and cheese. I followed the recipe off of
