Lots of pictures and lots of STUFFFFF!!! Ok first...Anyone ever had the Fuji Apple Chicken Salad from Panera? Well...its DELICIOUS, so yesterday I decided to try and recreate it. It didnt turn out perfect, but it was still pretty darn good. The original salad has citrus herb grilled chicken, greens, gorgonzola, pecans, red onions,tomatoes and of course the delicious apple vinagerette. I left out the pecans and tomatoes just because i didnt have any. Anyhoo here is what i did for the salad
dressing:
-1T White Balsamic Vinager
-1T cider vinegar
-1T sugar
-1t dijon mustard (i didnt have it so i used a tinnnny bit of horseradish just as an extra emulsifier)
-3T apple juice concentrate
-dash of garlic powder
-1/4 c. olive oil
I put everything in my little baby food processor and mixed it all up
Salad:
-grilled chicken, or you could use the pre packaged pre chopped stuff
-handful each of mixed greens and romaine
-thinly sliced red onion
-diced tomatoes
-handful of pecans
-about 1T of gorgonzola or more if you like
-handful of apple chips mmmmm
Then take your greens (mixed field greens and romaine)
put them in the bowl and top with however much of everything else you want, then pour on your dressing and enjoy
Now for the Foccacinis...its like little rounds of bread/almost pizza...this is what i used for mine and Don really loved them,but you could almost put whatever you wanted on them
-1 can of original biscuits
-1T pesto
-1T tomato paste
-1 clove of garlic through the press
-1t zesty italian dressing
-2T gorgonzola
-sprinkle of fresh grated parmesan cheese
Preheat oven to 350
Lightly grease a cookie sheet.Mix the pesto,tomato paste, garlic, and dressing together. Open your biscuits and flatten them out, and spread some of the pesto mixture on each flattened biscuit. Sprinkle some parmesan cheese, and gorgonzola on each one. Bake 15 minutes or until golden, serve WARRRRRRMMM yum.
TEA SAMMICHES!!!
I made these just for fun last nite
-4 slices of bread of your choice with the crusts cut off
-cream cheese
-mayo
-thinly sliced cucumbers (i used about 10 super thin slices)
-chopped dill (i love dilllll)
-salt and pepper to taste
Take your crustless bread and spread cream cheese on 2 slices and mayo on the other 2 slices. sprinkle dill on the cream cheese side,and salt and pepper on the mayo side. put 5 thin slices on 2 pieces of the bread and top with their partner pieces. Cut into fours, pour some tea, stick out your pinky and enjoyyyy
